Ingredients
- 2 pounds potatoes russet or red
- ⅔ cup half and half
- 2 ounces cream cheese
- 3 tablespoons butter
- ½ teaspoon salt
- ½ teaspoon seasoned salt
- ¼ teaspoon pepper
- 1 teaspoon rosemary fresh, minced
- ½ teaspoon thyme fresh, minced
Instructions
- Peel (optional) and dice potatoes.
- Boil until fork tender, drain.
- Mash over low heat, this allows the moisture to escape and creates fluffy mashed potatoes.
- Add half and half, cream cheese, butter, salt, season salt, pepper, and herbs.
- Mash until combined and smooth.
- Pour into buttered 8x8 pan. Dot top with additional butter, if desired. Cover with foil.
- When ready to eat, place covered pan in 350°F oven for about 20 minutes or until warmed through.

Notes
- The recipe uses both regular salt and seasoned salt, along with fresh herbs (rosemary and thyme). These multiple layers of seasoning are what give the potatoes their steakhouse-quality flavor.
- Having room temperature cream cheese will help it blend more smoothly into the potatoes without leaving lumps.
- You can prepare these ahead by transferring to a buttered 8x8 pan, dotting with butter, and covering with foil. When ready to serve, just warm in a 350°F oven for about 20 minutes.
- Boil the potatoes until "fork tender" — this means a fork should easily slide into the potato pieces with no resistance so that your potatoes will be smooth and not lumpy!
