- 3 tablespoons coarse orange marmalade
- 1 medium orange with skin on roughly chopped
- ½ cup (4oz/115g) butter softened
- ⅔ cup (4oz/115g) light brown sugar
- 2 large eggs
- 1 ¼ cup (6¼/177g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- 1 teaspoon ground ginger
- ½ teaspoon salt
- Creme Anglaise to serve
