Description

  • 1/2 cup strawberry hulled, fresh
  • 1/2 cup mint leaf fresh
  • 2 tbsp granulated sugar or simple syrup
  • 2 tbsp lime juice fresh
  • ice crushed
  • 1/2 cup white rum
  • club soda for topping
  • lices strawberry for garnish, or lime wheels or sprigs of mint

Instructions

  1. In two highball glasses, muddle strawberries, fresh lime juice, granulated sugar, and mint leaves with a muddler or the back of a spoon. You don't want to destroy the fresh mint leaves, just bruise them a little to release the oils.
  2. Add ice, pour in the silver rum,, and top with soda water.
  3. Garnish with lime slices, slices of strawberry, or a sprig of mint.

Notes

  • For parties, prepare a pitcher version by blending strawberries into a puree and making a mint simple syrup before combining with rum and club soda.
  • For a non-alcoholic version, omit rum and add rum extract with club soda or use club soda alone for a refreshing mocktail.
