Strawberry Simple Syrup
- 1 cup water
- 1 cup granulated sugar
- 1 cup strawberries chopped
Instructions
- Begin by making the strawberry syrup. Combine the water, sugar, and strawberries in a pot and bring it to a boil. Reduce the heat to low and simmer for 5 minutes, mashing the strawberries with a spoon when they're soft.
- Remove the pot from the heat, let it cool slightly, then strain it through a fine-mesh sieve. See notes.
- Add the mint, basil, and simple syrup to a cocktail shaker and muddle for about 30 seconds. Put a handful of ice into the shaker, add the rum and lemon juice, and stir until it's cold.
- Strain your strawberry mojito into a tall, ice-filled glass, top it with soda water, and garnish with strawberries, mint, and basil.
Notes
- The strawberry simple syrup makes enough for about 8 mojitos and can be refrigerated up to a month.
