Ingredients

Salad

  • 1 ½ cups romaine lettuce
  • ½ cup strawberries sliced
  • 2 tablespoons pecans toasted
  • 1 tablespoon feta cheese

Lemon Vinaigrette

  • ½ tablespoon freshly squeezed lemon juice freshly squeezed
  • ½ tablespoon white wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • salt and pepper to taste

Instructions

Prepare the salad in a mason jar

  1. Layer the ingredients into the jar.
  2. First, measure in the romaine.
  3. Next, add the sliced strawberries.
  4. Top the strawberries with the cooled, toasted pecans.
  5. Add the feta cheese on top.
  6. Screw on the jar top, and place in the picnic basket (or in the fridge) until it's time for the picnic.

Make the vinaigrette

  1. In a small mason jar, measure in the lemon juice, white wine vinegar, olive oil and honey.
  2. Season with salt and pepper, then place the cap on the jar, and mix vigorously.
  3. Store at room temperature before placing in the picnic basket for the picnic.

Prepare the salad

  1. Once at the picnic, open the salad jar, and pour the desired amount of vinaigrette in.
  2. Screw the cap back onto the salad jar, and shake until the vinaigrette coats the salad.
  3. Serve immediately, and enjoy!

Notes

  • This recipe is easily doubled or tripled. Just make sure to keep the salad and vinaigrette in separate jars until it's time to serve.
