  • 1 tablespoon extra virgin olive oil
  • 1 pound ground beef
  • 1 large yellow onion diced (about 1 ½ cups
  • 1 tablespoon garlic minced
  • 1 small green bell pepper seeded, diced
  • 1 small red bell pepper seeded, diced
  • 1 can diced tomatoes 15 ounces
  • 1 can tomato sauce 15 ounces
  • 2 cups beef broth
  • 2 cups water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper ground
  • 1 teaspoon Italian seasoning
  • ½ cup long-grain white rice uncooked, 92.5 g
  • parsley chopped for garnish

Instructions

  1. To a large pot over medium heat, add oil. Once hot, add ground beef and onions. Cook, breaking the meat up as you go, for 8-10 minutes or until ground beef is fully cooked and no longer pink. Add garlic. Cook for 1 minute.
  2. Add peppers, diced tomatoes, tomato sauce, beef broth, water, Worcestershire sauce, salt, pepper, Italian seasoning, and rice.
  3. Bring to a simmer. Then, reduce heat to low. Cover and cook for 20-25 minutes, or until the rice is cooked through, stirring occasionally.
  4. Garnish with parsley. Serve warm.
