Summer Squash Pizza

Summer Squash Pizza: Garlicky flatbread pizza topped with summer squash, fresh arugula and garlic and herb cheddar. Short on time; big on flavor!

Ingredients

  • 1 yellow summer squash sliced
  • 1/8-1/4 tsp garlic powder or 1 clove fresh minced garlic
  • salt and pepper to taste
  • a drizzle of your favorite healthy oil for sauteing
  • 1 fluffy garlic naan flatbread
  • 2-3 ounces of your favorite cheese
  • 1 cup fresh baby arugula tossed in olive oil and a splash of vinegar or lemon juice
  • 1-2 TBSP minced red onion

Instructions

  1. Pre-heat oven or toaster oven to 350 degrees F.
  2. Heat a small pan to medium-high heat with a drizzle of your favorite healthy oil.
  3. Add squash and saute until tender, seasoning with a sprinkle of salt, pepper, and garlic powder. If using fresh garlic add it after the squash has mostly softened and then cook for an additional minute.
  4. Grate your cheeses over the flatbread and add the squash.
  5. Bake for 8-10 minutes until the cheese is melted. For extra-bubbly cheese you can set the oven to broil for the last minute, but keep an eye on it to prevent charring.
  6. Top with a heaping up of fresh arugula and chopped red onion.
  7. Commence pizza party in your mouth.

Notes

  • t-rex chefs: prosciutto makes a tasty addition!
  • vegansaurus chefs: shred your favorite vegan cheese, add in some fresh herbs, and roasted or sauteed garlic and have at it!
