Swedish Meatloaf

Swedish Meatloaf combines ground beef and pork mixed with milk-soaked breadcrumbs, onion, and spices baked to a tender loaf. The included sour cream gravy, thickened with butter and flour, adds a creamy and rich topping that complements the meat's mild seasoning. This dish is hearty and comforting, ideal for a family meal served warm with the flavorful gravy poured over slices.

Description

The recipe for Swedish Meatloaf uses an equal mix of ground beef and pork for balanced flavor and texture. Fresh parsley, salt, pepper, and garlic powder season the meat gently without overpowering it. Soaked breadcrumbs with milk and diced onion help keep the loaf moist and tender during baking. The meat mixture is pressed firmly into a loaf pan and baked until cooked through to an internal temperature of 160°F.

The accompanying gravy combines butter and flour cooked into a roux, then enriched with beef broth and sour cream for a slightly tangy, creamy finish. This is poured over the meatloaf slices to add moistness and flavor. The dish fits well as a main course paired with mashed potatoes or vegetables.

Instructions

Meatloaf

  1. Preheat the oven to 350°F. Spray a 9x5-inch loaf pan with nonstick cooking spray. Set aside.
  2. To a large bowl, add ground beef, ground pork, parsley, salt, pepper, garlic powder, and beaten egg. Mix together until just combined. (I prefer to use my hands to mix, but a spoon or spatula would also work.)
  3. In a medium bowl, combine the milk, breadcrumbs, and onion.
  4. Add milk mixture to the meat mixture being careful not to overwork ingredients.
  5. Add the meat mixture to the prepared loaf pan, pressing the meat in tightly.
  6. Bake for 60-65 minutes, or until no longer pink in the center. The meatloaf is fully cooked when it reaches an internal temperature of 160°F.
  7. During the final 5-10 minutes of cooking the meatloaf, prepare the gravy.

Gravy

  1. To a large skillet over medium heat melt butter. Add flour and whisk to combine.
  2. Add beef broth, sour cream, salt, and pepper. Stir to combine. The mixture will thicken slightly.
  3. Pour gravy over meatloaf and serve warm!
