Ingredients
- ½ cup rice vinegar
- ½ cup light brown sugar , to taste
- ½ cup plus 2 tablespoons water , divided
- 2 tablespoons Shaoxing wine or dry sherry
- 1 tablespoon soy sauce
- 3 Thai bird’s eye chili peppers , seeded and minced, or 2 teaspoons crushed chili pepper flakes
- 1 tablespoon sambal oelek
- 5 garlic cloves , minced
- 1 tablespoon ginger , minced
- 1 tablespoon cornstarch
Instructions
- Add all the ingredients except the cornstarch to a blender and blend until smooth.
- In a medium nonstick pan over medium-high heat, add the mixture and bring it to a boil, stirring constantly. Next, turn to medium heat and cook for 5 more minutes, stirring constantly. Then, turn to medium-low heat.
- In a small bowl, mix the cornstarch with two tablespoons of water until fully dissolved; pour into the pan, and simmer, occasionally stirring, until the sauce is thickened, about 1 to 2 minutes. (keep in mind that the sauce will further thicken once it cools).
- Taste the sauce and adjust the taste by adding more sugar if not sweet enough or more vinegar if not sour enough. If the Spicy Sweet Chili Sauce turns out too thick, mix in a few spoons of water to thin it out while it’s still hot.
- Pour the Spicy Sweet Chili Sauce into a bowl and let sit until thoroughly cooled. Serve it as a dipping sauce or store it in an airtight jar in the fridge for up to 5 days.
