Ingredients
- 1 pound elbow macaroni
- 1 1/2 cups mayonnaise
- 1 cup sweetened condensed milk
- 2/3 cup apple cider vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 2 carrots , shredded
- 1 green pepper , finely chopped
- 1 red bell pepper , finely chopped
- 1/2 yellow onion , finely chopped
Instructions
- Cook pasta according to directions on the box, then drain, rinse with cold water, and set aside.
- In a large bowl whisk together mayonnaise, sweetened condensed milk, apple cider vinegar, salt, and pepper until smooth.
- Add in carrots, green bell peppers, red bell peppers, onions, and cooled pasta.
- Toss well until everything is coated, then refrigerate for 4 hours or overnight.
