Sweet matzo brei recipe (Passover French Toast)

Sweet matzo brei is a Passover dish made by soaking matzo pieces briefly in water, then combining them with a cinnamon and vanilla flavored egg custard before frying in butter. It creates a tender, slightly crisp scrambled pancake-like dish dusted with cinnamon sugar, served warm with maple syrup or honey for added sweetness.

Description

This sweet matzo brei recipe uses matzo sheets soaked briefly in cold water to soften before breaking into pieces. These pieces are mixed with a custard of eggs, milk, cinnamon, and optional vanilla, which coats them thoroughly. The mixture cooks in butter over medium heat, gently stirring until the matzo achieves a lightly golden, tender texture.

The dish finishes with a sprinkle of cinnamon sugar and is served with maple syrup or honey. The combination provides a balance of mild crunchiness and softness, with warm spices enhancing the flavor.

Ingredients

Servings
  • 2 matzo sheets regular, gluten free or 2 large homemade matzah crackers
  • 3 egg
  • 2 tablespoon milk
  • 2 tablespoons butter for frying, you can also use Earth Balance or olive oil
  • 1 tablespoon granulated sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract optional

Instructions

  1. Begin by filling a large bowl or casserole dish with cold water and submerging the matzo crackers in it for 20-30 seconds (if using gluten-free matzo, 20 seconds are enough).
  2. Break matzo into small pieces or about 1-2 inches. Transfer to a large bowl or casserole dish.
  3. Whisk together the eggs, milk, ½ teaspoon cinnamon, and vanilla (if using), in a shallow bowl or pie pan.
  4. Melt the butter in a nonstick frying pan over medium heat.
  5. Pour the egg mixture on top of the matzo pieces. Mix well to combine, making sure to coat both sides of the bread. Place the matzo pieces with the custard in the frying pan and cook, stirring often, until slightly golden brown, about 2-3 minutes.
  6. In a small bowl, whisk together sugar and remaining cinnamon.
  7. Transfer to a large platter. Sprinkle cinnamon sugar over matzo brei.
  8. Serve the sweet matzo brei with maple syrup or honey and enjoy!
