Sweet Potato Pierogies

In this easy pierogies recipe, wonton wrappers are filled with leftover mashed potatoes, then pan seared with caramelized onions for a delicious meal!

Ingredients

  • 1 package square wonton or ravioli wrappers
  • 1 cup leftover mashed potatoes sweet or traditional
  • 4 tbsp butter
  • 1 cup onion sliced
  • 1 tsp brown sugar

Instructions

  1. Use a 4” round pastry cutter to cut the wrappers into large circles.
  2. Brush the edges of each circle with water.
  3. Place a spoonful of mashed potatoes in the middle of each circle.
  4. Fold over and press the edges together to seal.
  5. Add the butter to a large skillet over medium heat.
  6. Once the butter is melted, add the onion and saute 2-3 minutes, sprinkle the brown sugar over the onions and saute for an additional 6-8 minutes.
  7. Add the pierogies to the skillet with the caramelized onions, 5-6 at a time and brown lightly on each side for 3-4 minutes.
  8. Serve the pierogies with the caramelized onions.
