Ingredients
- 12 ounces pasta shells cooked al dente according to package instructions, jumbo
- 1 pound ground beef browned
- 2 tablespoons taco seasoning homemade
- 1 cup salsa we prefer chunky salsa here
- 1 cup sweet corn we use canned and yes, you can use the whole can if you want
- 1 cup black beans drained and rinsed
- 1 block cream cheese room temperature
- ½ cup cheddar cheese shredded, mild
- 1 cup Mexican cheese blend shredded
- 1 medium tomato diced for topping
- 1 medium jalapeno pepper diced for topping
- ¼ cup sour cream for topping
Instructions
- Preheat oven to 350°F. Spray a large oval casserole dish with nonstick cooking spray.
- In a large bowl, combine ground beef, seasoning, cream cheese, cheddar cheese, salsa, corn, and black beans. Make sure you have drained and rinsed the black beans well.
- Stuff the ground beef mixture into each shell and place into the prepared casserole dish.
- Top with Mexican cheese.
- Bake for 15-20 minutes, or until bubbly.
- Top with tomato, jalapeno, and sour cream.
Notes
- *In this recipe "Mexican cheese" can be the blend you buy at the grocery store. It is often a blend of Monterey Jack, Cheddar, Queso Quesadilla, and Asadero cheeses. You can also use Queso Fresco or Cotija cheese.
