Tahini Granola
Description
The Tahini Granola recipe uses tahini combined with honey, olive oil, vanilla extract, cinnamon, and salt, warmed gently to blend. This mixture coats old-fashioned oats and a nut selection that includes pecans, almond slivers, walnuts, and cashews before baking at 325°F until golden. Stirring once during baking helps achieve even toasting and cluster formation.
The flavor includes the characteristic nuttiness of tahini with sweetness from honey and spice from cinnamon, offering a granola that balances sweet, savory, and toasted notes. The clusters remain crisp once fully cooled and can be stored in an airtight container for several months, making it a convenient homemade granola.
The granola can be customized with additional mix-ins like dried cranberries or chocolate chips after baking or topped with toasted sesame seeds before baking to intensify the sesame flavor.
Ingredients
- 1/2 cup tahini 120 g
- 1/3 cup honey 115g, (can go up to 1/2 cup if you like your granola sweeter)
- 3 tablespoon olive oil
- 1 teaspoon vanilla extract
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 cups old fashioned oats
- 3/4 cup nuts I used pecans, almond slivers, walnuts and cashews, of choice
Instructions
- Preheat oven to 325 F (165 C) and line a baking tray with parchment paper.
- In a small saucepan combine tahini, honey, olive oil, vanilla, cinnamon and salt. Stir over medium low heat until warm and smoothed out (3 min or so). You can also microwave for 20-30 seconds.
- In a large bowl, mix together oats and nuts. Pour the tahini mixture over the oats and stir until evenly combined.
- Spread granola evenly onto prepared sheet. Bake for 20-25 minutes until light golden brown, stirring once halfway through. After stirring, press granola back down.
- Cool completely, then break granola into your desired clump size. I like nice big clusters. Store in an airtight container, will last at least a couple months.
Notes
- Add mix-ins such as shredded coconut, dried cranberries, or chocolate chips after baking for varied textures and flavors.
- Consider adding toasted sesame seeds before baking to amplify the sesame notes from the tahini.
- Wait until the granola is completely cool before breaking it into clusters to preserve larger pieces.
