Description

The tahini is made by gently toasting hulled sesame seeds in a pan over medium heat, stirring frequently to evenly brown and release a nutty aroma. After toasting, the sesame seeds are transferred to a food processor and ground until crumbly. Neutral-flavored oil such as grapeseed or avocado oil is added in stages, blending thoroughly until smooth, creamy, and pourable. The recipe includes pausing periodically to scrape the bowl and ensure even texture. If too thick, additional oil can be incorporated for desired fluidity. Tahini can be stored in a sealed jar in a cool, dry place for up to three months. It serves as a key ingredient in dishes like hummus and baba ganoush and can be used to make sauces served alongside various Middle Eastern dishes.

  • 2 cups sesame seeds hulled
  • 4 tbsp neutral oil such as grapeseed or avocado oil, neutral flavor

Instructions

  1. Place a pan over medium heat and add the sesame seeds. Stir frequently and toast them for 5 to 8 minutes, until they are fragrant and smell nutty. Keep a close eye because sesame seeds burn quickly.
  2. Put the toasted sesame seeds into the bowl of a food processor. Blend on high for 2-3 minutes until they are crumbly. Scrape the sides and the bottom of the food processor.
  3. Add the oil and blend again for 2-3 minutes until the tahini is smooth and pourable. Pause every 30 seconds to scrape the sides and the bottom using a spatula.
  4. If the tahini is still thick and not pourable, add one more tablespoon of oil and blend again.
  5. Pour into a jar and seal. Store in a cool, dark and dry place for up to 3 months.
