Tequila Lime Coleslaw with Cilantro
Description
This coleslaw features a creamy dressing combining mayonnaise, fresh lime juice, silver tequila, granulated sugar, salt, and black pepper. The dressing is whisked smooth before being combined with sliced green onions, coleslaw mix, and shredded red cabbage. Tossing these ingredients together coats the cabbage in a bright, tangy, and slightly boozy dressing.
Refrigerating the slaw for at least an hour allows the flavors to blend and the cabbage to soften slightly while maintaining a crisp texture. The cilantro provides a fresh, citrusy herbal accent that complements the lime and tequila.
Ingredients
- 1/4 cup mayonnaise
- 3 Tbsp lime juice fresh is best
- 2-3 Tbsp cilantro fresh, minced
- 1 Tbsp tequila silver
- 3 tsp granulated sugar
- 1/4 tsp salt
- black pepper pinch
- 1/3 cup green onion thinly sliced
- 14 oz coleslaw mix (or equal amount of shredded cabbage and carrots)
- 1/2 cup red cabbage shredded
Instructions
- To a large mixing bowl, add the first 7 ingredients (through black pepper) and whisk to combine until smooth.
- Add green onions, coleslaw mix and red cabbage and toss to combine. Cover and refrigerate for at least an hour, to allow flavors to fully combine.
