Thai Chicken Skewers

These Thai chicken skewers served with peanut sauce are savory, sweet, a little spicy, and can be served over rice for dinner or serve them as an appetizer.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1 inch pieces
  • 2 tablespoons low sodium soy sauce, tamari for gluten-free
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon olive oil
  • 1 tablespoon fish sauce
  • 1 tablespoon chili paste
  • 2 1/2 tablespoons maple syrup
  • 2 tablespoons chopped cilantro
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, grated or minced

Instructions

  1. Cut the chicken into 1 inch pieces and place them into a resealable freezer bag. Combine all of the ingredients for the chicken marinade in a bowl or measuring glass. Whisk together and then pour the marinade in with the chicken. Seal the bag and massage the marinade into the chicken. Let the chicken marinate in the refrigerator for 1-3 hours.
  2. While the chicken is marinating make the peanut sauce. Combine all of the ingredients together in a bowl and whisk until smooth. Thin the sauce with water as needed. Cover and refrigerate until ready to serve.
  3. Preheat your grill to 400° F. and clean the grill grates. Thread the chicken onto skewers. Oil the grill grates then place the chicken skewers on them.
  4. Let the chicken cook for 3-4 minutes before flipping it over and grilling another 3-4 minutes or until cooked through, 165° F. Remove the skewers from the grill and drizzle with some of the peanut sauce, sesame seeds, and cilantro. Serve with the remaining peanut sauce for dipping.
