  • 3 ounce cans coconut milk light
  • 3 tablespoons red Thai curry paste
  • lime juice of 1
  • salt to taste
  • cilantro roughly chopped

Instructions

  1. In a large stockpot bring water to a boil. Stir in coconut milk, curry paste, and lime juice. Cook for 10-15 minutes until fragrant.
  2. Sitr in lobster and cook until just hot throughout (3-5 minutes) and season with salt and pepper to taste. Garnish with freshly chopped cilantro and serve.

Notes

  • If boiling live lobsters for this bisque, save the lobster cooking water to use as the water component, boosting the soup's seafood flavor.
