Thai Peanut Noodle Salad with Pork

This Thai Inspired Peanut Noodle Salad with Pork is the perfect last minute dinner or as a meal prep. Coated with a yummy peanut sauce, this “salad” hits the spot!

Ingredients
Peanut Sauce
- 1 cup peanut butter
- 2 tbsp rice vinegar
- 5-6 tbsp soy sauce
- 2 tbsp lime juice
- 1/4 cup olive oil or more if needed
Rice Noodles
- 500 grams rice noodles
- 1 tbsp olive oil
- 2 tbsp garlic
- 1 lb pork, preferably Ontario Pork
- 4 tbsp soy sauce
- salt & pepper to taste
- 2 carrots, preferably from Ontario shredded
- 1 cucumber, preferably from Ontario sliced
- peanuts

Instructions
- In a bowl, mix together the ingredients of the peanut sauce and set aside.
- Bring a pot of water to boil and add in the rice noodles, cooking it as directed on the package.
- While doing that, on medium heat, add in olive oil and garlic to a pan. Let it cook for 1-2 minutes before adding in the pork, soy sauce, salt & pepper, stirring and sautéing until done.
- Once the rice noodles are done, drain the noodles and rinse them under cold water (helps it from lumping together).
- Add half of the peanut sauce to coat the noodles. Then combine with the pork, carrots, and cucumbers. Top with more peanut sauce, basil if you have on hand, roasted peanuts, and a lime wedge.
Notes
- You may need more or less olive oil to make the peanut sauce "saucy" as it depends on how thick your peanut butter is. Some pbs are more thick than others!
