Description

This Thai Shrimp Noodle Soup starts by boiling water with bruised lemongrass, kaffir lime leaves, and fresh galangal to create a fragrant broth. Tomato wedges, medium-sized shelled shrimp, white mushrooms, and Thai roasted chili paste are then added and cooked until the shrimp are done. The soup is flavored with fish sauce and enriched with evaporated milk for creaminess. Fresh lime juice is stirred in at the end to brighten flavors, and cilantro leaves garnish the dish.

Cooked instant ramen noodles are drained and added to the soup just before serving, ensuring they remain tender but not overcooked. The combination results in a rich yet fresh soup with layers of herbal, spicy, and citrus notes typical of Thai cuisine.

  • 2 talks lemongrass white part only, pounded and bruised
  • 6 kaffir lime leaves bruised
  • 5 lices galangal fresh
  • 1 to tomato cut into wedges
  • 6 oz. Shrimp medium-sized, shelled and deveined
  • 2 oz. white mushrooms cut into pieces
  • 3 tablespoons nam prik pao Thai roasted chili paste
  • 1 tablespoon fish sauce or to taste
  • 1/4 cup evaporated milk
  • 3 tablespoons lime juice
  • cilantro for garnishing, leaves

Instructions

  1. Prepare the ramen noodles according to the package instructions, discarding the seasoning packets. Cook until al dente, then rinse with cold water and set aside.
  2. Meanwhile, bring water to a boil in another pot. Add the lemongrass, kaffir lime leaves, and galangal, and let it boil for 1 minute. Then, add the tomatoes, shrimp, mushrooms, and nam prik pao.
  3. Continue boiling until the shrimp is cooked through. Add the fish sauce and evaporated cream. Turn off the heat, then add the noodles and lime juice, stirring to combine well. Garnish with cilantro leaves and serve immediately.

Notes

  • Omit kaffir lime leaves and galangal if unavailable; the soup will still be flavorful.
