Thanksgiving Leftovers Casserole

A comforting casserole made from Thanksgiving leftovers ~ it's the way we keep that delicious holiday vibe going, long after the 4th Thursday of November!

Ingredients

  • 2-3 cups stuffing
  • 7-10 lices roasted turkey, or enough shredded turkey to generously cover the stuffing.
  • 2/3 cup gravy
  • 2 cups green bean casserole (or other veggie)
  • 1 cup cranberry sauce
  • 3-4 cups mashed potatoes

  • 1 1/2 cups shredded white cheddar cheese
  • 1/2 cup French's® Fried Onions

Instructions

  1. Preheat the oven to 350F
  2. Add a layer of stuffing to the bottom of your casserole. This is the base of your casserole, so make sure it covers the entire bottom. If you love stuffing, add as much as you like.
  3. Arrange sliced or shredded turkey over the stuffing. I suggest overlapping slices or, if using shredded turkey, using plenty. The turkey should be the star of your casserole.
  4. Ladle a liberal amount of gravy over the turkey.
  5. Next add your green bean casserole, or whatever veggie you're using. Spread it out evenly.
  6. For the cranberry sauce you can add small dollops over the beans. You can spread it out evenly or leave it as dollops.
  7. Add a thick layer of mashed potatoes over top. I don't spread the potatoes all the way to the edges, I think it looks more appetizing that way.
  8. Sprinkle the potatoes with the cheddar cheese. Tent with foil (you don't want it sticking to the cheese, so use toothpicks if necessary to keep the foil off the casserole surface.)
  9. Bake for about 50 minutes, or until hot and bubbling throughout. Untent the casserole for the last 10-15 minutes. Note: if your casserole looks pale you can run it under the broiler very briefly to get some browning. Be careful, it can burn in an instant.
  10. Serve hot, topped with the fried onions.

Notes

  • The exact amounts of the ingredients will vary according to your casserole dish and what you've got. Take my amounts as starting points, there is a lot of leeway here.
