  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C). Grease and line the bottom of a 9-inch springform pan with parchment paper.
  2. Prepare the Crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, then remove from the oven and set aside.
  3. Make the Cheesecake Filling: Beat the softened cream cheese with sugar and vanilla extract until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in sour cream and heavy cream until fully combined.
  4. Bake the Cheesecake: Pour the cheesecake filling over the crust. Tap the pan on the counter to release any air bubbles. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  5. Cool and Chill: Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Afterward, chill in the refrigerator for at least 4 hours, preferably overnight.
