Ingredients
- 1 cup ricotta cheese
- 1/2 cup milk
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 cup granulated sugar
- 1 cup all purpose flour
- 1 tbsp baking powder
- oil for cooking

Instructions
- Combine ricotta cheese, milk, eggs, vanilla extract and sugar. Stir until well combined.
- In a separate bowl combine flour with baking powder. Add flour mixture to the ricotta mixture, and mix just until combined.
- Lightly coat a skillet with oil and preheat over medium heat. Pour about 1/4 cup of batter into the hot skillet. Fry pancakes until bubbles appear on top and both sides are golden brown, flipping once.
- Serve with your favorite toppings while they are still hot.
