The Best Welsh Rarebit

Report
The Best Welsh Rarebit is an open-faced toasted bread dish topped with a savory mixture of melted cheddar cheese, egg, Worcestershire sauce, Dijon mustard, and milk. The cheese topping is spread on toasted bread slices and then browned under the grill, creating a rich, creamy, and flavorful crust with a slight tang from the mustard and Worcestershire sauce.

Description

This Welsh Rarebit recipe starts by combining grated cheddar cheese with egg, whole milk, Dijon mustard, and Worcestershire sauce to create a smooth, flavorful cheese spread. The mixture is then evenly divided and spread over toasted bread slices that have been crisped on both sides. Placing the prepared slices under a grill melts and browns the cheese topping, resulting in a warm, bubbling, and golden crust.

The texture merges the crisp toast base with a creamy, slightly tangy, and savory cheese layer. Optional seasonings like smoked paprika or cayenne can add a mild spice, while fresh herbs such as chopped chives introduce a bright contrast. Adding finely chopped spinach or grated courgette can boost the vegetable content but requires draining excess moisture to keep the toast from becoming soggy.

This dish is traditionally served as a hearty snack or light meal. It pairs nicely with simple sides or warming drinks and is especially popular as a comforting cheese toast option.
