Ingredients

  • 6 large potatoes
  • salt and pepper
  • 2 tbsp olive oil
  • 1 l sunflower oil
  • salt flakes

Instructions

  1. Peel the potatoes.Using a mandoline, slice the potatoes lengthwise.
  2. Place the potatoes in a bowl and season with oil, salt, and pepper.
  3. In a high-sided baking dish, arrange the potatoes evenly on top of each other.
  4. Be sure to fill the edges well.
  5. Bake covered with aluminum foil for one hour at 150C/300F.
  6. Let cool, then refrigerate for at least 8 hours.
  7. Cut the potato terrine into cubes of roughly the same size.
  8. Heat the vegetable oil to 190℃/375℉.
  9. Fry the potato cubes until golden and crispy.
  10. Finish with flakes of salt.Enjoy your meal!
