Tom Ka Gai {Thai Coconut Soup}

Coconut chicken soup slightly adapted from allrecipes.com. For Paleo, substitute coconut sugar for cane sugar. For Whole30 omit sugar.

Ingredients

  • 3/4 pound boneless skinless chicken, I used all breast meat.
  • 3 Tablespoons coconut oil
  • 2 ounce coconut milk cans
  • 2 cups water
  • 2 Tablespoons ginger root minced, fresh
  • 4 Tablespoons fish sauce Thai
  • 1/4 cup lime juice fresh
  • 1/4 teaspoons cayenne pepper
  • 1 teaspoon sugar
  • 3/4 teaspoon Turmeric ground
  • 2 green onions thinly sliced
  • cilantro chopped, fresh

Instructions

  1. Cut chicken into thin strips and in a large saucepan, sauté in coconut oil for 2-3 minutes, or until chicken turns white.
  2. Add coconut milk and water and bring to a boil. Reduce heat and add ginger, fish sauce, lime juice, cayenne, sugar, and turmeric.
  3. Simmer until the chicken is done, about 10 minutes. Adjust seasoning adding more cayenne if necessary.
  4. Sprinkle with fresh cilantro and sliced green onions.
