Tomato Basil Chicken is a simple and flavorful dish that cooks up in one pot.

Ingredients
- 4 boneless skinless chicken breasts
- 1 can crushed tomatoes
- 1 cup cherry tomatoes halved
- 1 ½ tablespoon tomato paste
- 3 cloves garlic minced
- 1 tablespoon olive oil
- 1 shallot minced
- 1 teaspoon red pepper flakes
- ½ cup heavy whipping cream
- ½ cup fresh basil
- ½ cup Parmesan shavings
Instructions
- Get out and measure all of your ingredients.
- Season the chicken: Season both sides with garlic powder, pepper, and onion powder over a plate.
- Rub the seasoning into the chicken.
- Sear the chicken: Add olive oil to a skillet over medium high heat. Sear the chicken 4 minutes per side. Remove from heat and set aside.
- Cook the tomato sauce: Add tomato paste, minced garlic, and minced shallot to the skillet.
- Sauté for 1 minute.
- Add crushed tomatoes, cherry tomatoes, and red pepper flakes.
- Cook for 5 minutes. Use a potato masher to crush cherry tomatoes.
- Add heavy whipping cream.
- Stir until blended.
- Add the chicken back to the skillet and reduce heat to medium. Cook for 10 minutes. Check to be sure chicken reaches an internal temp of 165 degrees.
- Garnish with chopped basil.
- Add parmesan shavings.
- Serve chicken with a scoop of tomato sauce over the top and enjoy every bite!
