Description

This soup brings together a generous quantity of fresh tomatoes along with carrots, potato, onion, celery, and garlic in a vegetable stock base. Fresh basil is added to infuse herbal notes, and tomato puree intensifies the tomato flavor. The ingredients simmer for about an hour to soften and blend their flavors.

After simmering, the soup is pureed until smooth using a blender and returned to simmer with the tomato puree added in the final step. This produces a velvety texture with balanced acidity and sweetness.

The soup can be customized by roasting the tomatoes and garlic beforehand to deepen flavor, swapping shallots for onion for sweetness, or adding a splash of coconut milk or crème fraîche for creaminess. Using a low-salt stock and controlling garlic quantity allows tailoring to taste preferences or dietary needs, including a milder version suitable for children.

Ingredients

  • 10 tomato medium
  • 2 carrot
  • 1 potato large
  • 1 onion
  • 2 rib celery
  • 6 garlic use less if you are not a big garlic fan, clove
  • 3.5 l vegetable stock
  • 10 g basil chopped, fresh
  • 100 g tomato puree

Instructions

  1. Chop all of the vegetables and put into a large soup pan.
  2. Add the stock and basil and season.
  3. Bring to boil and simmer for 1 hour.
  4. Pour the soup into a blender (or use a hand blender if you don't have one) and blend until smooth. You may need to do this in batches if you have a small blender.
  5. Pour it back into the pan and add the tomato puree. Simmer for 5-10 minutes.

Notes

  • Roasting tomatoes and garlic before simmering can intensify the soup's flavor but extends cooking time.
  • Shallots may be substituted for onions to add a sweeter flavor.
  • Use a high-powered blender for a very smooth texture and allow the soup to cool before blending to protect the blender.
  • Add coconut milk or crème fraîche after blending to create extra creaminess.
  • For children's servings, use low-salt vegetable stock and reduce garlic amount.
