Tomato Herb Soup

Tomato Herb Soup is a gently spiced broth-based soup combining tomato paste, crushed tomatoes, and a blend of dried herbs including oregano, basil, thyme, and rosemary. Garlic is sautéed in olive oil to infuse the soup with savory depth, balanced by a touch of brown sugar and a hint of heat from crushed red pepper.

Description

The soup starts by softening minced garlic in olive oil alongside dried Mediterranean herbs and cracked black pepper. Tomato paste is stirred in and cooked until it darkens slightly, developing richer flavors. Adding crushed tomatoes and vegetable broth creates the base of the soup, which is heated until smooth and hot.

The resulting texture is smooth and thin broth-like rather than creamy, with herbal brightness and balanced acidity from the tomatoes complemented by the aromatic garlic and subtle warming spice. Brown sugar adds a touch of sweetness to round out the acidity.

This soup works well as a light starter or a simple lunch paired with bread. It highlights common pantry ingredients in a straightforward, herbaceous preparation.

Using roasted garlic in place of raw minced garlic is suggested to create a mellower and sweeter garlic flavor.

Ingredients

Servings
  • 2 cloves garlic $0.16
  • 1/4 cup olive oil $0.64
  • 1/2 tsp oregano $0.05, dried
  • 1/2 tsp basil $0.05, dried
  • 1/2 tsp thyme $0.05, dried
  • 1/4 tsp rosemary $0.03, dried
  • 1 pinch crushed red pepper $0.02
  • 1/4 tsp black pepper $0.03, freshly cracked
  • 1 oz. can tomato paste $0.39
  • 1 Tbsp brown sugar $0.02
  • 1 oz. can crushed tomatoes $0.79
  • 3 cups vegetable broth $0.39

Instructions

  1. Mince the garlic and add it to a sauce pot along with the olive oil, oregano, basil, thyme, rosemary, red pepper flakes, and freshly cracked pepper. Turn the heat on to medium-low and sauté for about 2 minutes, or until the garlic has softened.
  2. Add the tomato paste and brown sugar. Stir until everything is mixed (the oil may stay partially separated). Cook the mixture while stirring continuously for 3-5 minutes, or until the tomato paste takes on a darker, almost burgundy hue.
  3. Add the crushed tomatoes and vegetable broth. Whisk the mixture together until smooth. Turn the heat up to medium and heat through, stirring occasionally. Serve hot.

Notes

  • Use roasted garlic for a milder, sweeter garlic flavor in this tomato herb soup.
