Tomato Orecchiette with Ground Beef

  • 6 oz. orecchiette pasta
  • 1 lb. lean ground beef
  • 1/2 tsp Italian seasoning divided
  • 1/2 tsp salt
  • 2 tsp unsalted butter
  • 2 cloves garlic minced
  • 2 Tbsp tomato paste
  • 8- oz. can tomato sauce
  • 14- oz. can diced tomatoes drained
  • 1/4 cup heavy cream (60g)
  • 2 Tbsp grated Parmesan cheese

Instructions

  1. Bring a pot of water to a boil. Season with 1 tablespoon of salt. Once boiling, add pasta. Cook to al dente according to package instructions (see notes).
  2. Meanwhile, brown the beef in a large skillet over medium-high heat breaking into small pieces until no longer pink. Season with salt and 1/4 tsp italian seasoning. Drain grease and transfer to a bowl.
  3. Reduce heat to medium. Add the butter and minced garlic to the skillet. Sauté, stirring continuously, for about a minute, then add in the tomato paste, tomato sauce, diced tomatoes, cream and 1/4 tsp Italian seasoning. Stir together and saute for about 5 minutes to thicken, stirring occasionally and reducing heat as needed. Taste the sauce and salt and pepper as needed (I added 1/4 tsp each).
  4. Drain the pasta then toss with the sauce and cooked beef in the skillet. Sprinkle parmesan cheese over top. Serve hot and enjoy!

Notes

  • Pasta: you never want to overcook pasta of course but especially not with this dish! The orecchiette is one of the stars of the show and if the pasta gets mushy this meal is going to feel mushy so we must get it al dente! The easiest way to make sure you get al dente pasta is to cook the pasta for two minutes less than the lowest recommended cooking time. You’ll be mixing it with the sauce and beef later, so if it still has too much of a bite you can get it more tender then!
