Tomato Pesto Grilled Cheese (Dunkin Copycat)

Pesto, gooey mozzarella cheese, with fire-roasted tomatoes, on grilled and buttered sourdough bread topped with parmesan cheese, these Tomato Pesto Grilled Cheese Sandwiches make the best, flavor-bursting grilled cheese that you have ever tasted!

Ingredients
- 4 thick slices bread (use sourdough bread for Duncan Copycat version)
- 4 tablespoons pesto
- 4 Slices mozzarella cheese or provolone
- 1 can Fire Roasted Tomato OR thinly sliced fresh tomatoes (4-8 slices needed, depending on the size of tomato)
- 2 tablespoons butter
- 2 tablespoons Parmesan Cheese

Instructions
- Butter 1 side of all slices of bread with about ½ tablespoon each, set butter side down.
- Spread 1 tablespoon of pesto on the opposite side of each slice of bread.
- Top 2 of the slices of bread, on the pesto side, with 1 slice of cheese, sliced tomatoes, about ½ tablespoon parmesan, another piece of cheese, and then top with another slice of bread- pesto side down on the sandwich.
- Cook on medium heat until the bottom slice of bread is golden, repeat on the other side.
- Sprinkle half of the rest of the parmesan on top and enjoy!
- Repeat this process with the next sandwich and enjoy your flavor bursting, warm and cheesy sandwich!

- This sandwich tastes best when enjoyed right away. Feel free to halve the recipe for 1 sandwich, or multiply for more!
