Delicious and comforting tomato soup in soup maker. Loaded with plenty of tomatoes, red peppers and fresh basil and paired with cheese on toast, its perfect for busy weeknights.

Ingredients
- 1 sweet potato medium
- 1 red bell pepper medium
- 3 tomato medium
- 1 white onion medium
- 2 400 g canned tomatoes
- 2 Tsp Garlic puree
- 1 Tbsp tomato puree
- basil handful, fresh
- 1 Tbsp basil dried
- 1 Tbsp mixed herbs
- salt
- black pepper

Instructions
- Chop your tomatoes into quarters and peel and dice sweet potato, and onion. Deseed and dice your red pepper.
- Place into the soup maker all the ingredients apart from the tinned tomatoes, making sure that the quartered tomatoes are added first.
- Then pour over a can of tinned tomatoes. Place the lid on the soup maker and set it to smooth soup and cook it for 25 minutes.
- Then after you have done the 25 minutes add in an extra can of tinned tomatoes, do a taste test and adjust the seasoning if needed and then pulse to mix in the extra can.
- Then serve your tomato soup with some grilled cheese.
Notes
- Cream. If you would like a creamier tomato soup, I recommend a small tub of Philadelphia cream cheese. This will make it really creamy.
