Ingredients
- 4 Tbsp butter
- 1 onion chopped
- 3 leek trimmed, sliced, thoroughly rinsed, and dried, large
- 2 russet potato peeled and diced
- 3 1/2 cups chicken stock or vegetable stock
- 1/2 cup peas frozen
- salt fresh cracked
- black pepper fresh cracked

- sour cream thinned with milk to a drizzle-able consistency

Instructions
- Melt the butter in a large soup pot and saute the onion, leeks, and potato for about 5 minutes, stirring often.
