  • ¼ cup sugar
  • ¼ cup almond flour
  • 3 tablespoon rice flour
  • 1 cup half and half
  • 1 ¼ cup cottage cheese
  • Your favorite toppings

Instructions

  1. Preheat the oven to 350 degrees F. Grease an 8-inch cake pan and set aside.
  2. Combine the eggs and sugar in a blender.
  3. Mix together the ground almonds, rice flour, half-and-half, and cottage cheese.
  4. Add the batter to the baking pan and bake for about 1 hour, or until the surface just starts to brown.
  5. Remove the cheesecake from the oven and allow it to cool.
  6. Serve with your favorite toppings and enjoy!
