Instructions

  1. Separate the egg whites from the egg yolks.
  2. In a large bowl, use a hand mixer to beat the egg yolks with the sugar until you get a creamy paste.
  3. Pour in the milk and oil, and continue to mix.
  4. Sift in the flour, and add the vanilla extract.
  5. Mix again to get a smooth paste.
  6. In a separate bowl, beat the egg whites with a pinch of salt until they form stiff peaks.
  7. Use a spatula to gently incorporate the egg whites into the batter.
  8. Line a large baking tray with non-stick paper, and pour the batter in.
  9. Cut the plums in half and pit them, then arrange each half on top of the batter, making sure they are close to each other.
  10. Bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 20-25 minutes until golden and a toothpick inserted in the middle comes out clean.
  11. Dust with icing sugar, then cut into squares.

Notes

  • If you'd like to see the ingredients listed in cups and ounces, please check the US Customary Link.
  • Also, the amount of ingredients changes depending on the servings, so click on the number listed to change it to the number you prefer.
  • Dusting the plums in flour might seem like a strange step to follow, but that helps keep the plums at the top, rather than sink at the bottom of the sponge.
  • The plums can be replaced with apricots, peaches, cherries and sweet cherries, and even grapes. Just follow the same steps, and keep an eye on the oven, as different ovens can bring different results.
