Turkey Lasagna Soup

This turkey lasagna soup is fast, easy and a healthy family favorite! You can also make this a beef lasagna soup by switching out the meat as well!

Ingredients

  • 1-2 tablespoons olive oil
  • 1 medium yellow onion diced
  • 1 pound ground turkey
  • 5 cloves garlic minced
  • 6 cups strong chicken broth for a thinner soup add 7-8 cups
  • one ounce can diced tomatoes
  • one .5 ounce can tomato paste
  • 1 1/2 tablespoons Italian seasoning
  • 1-2 teaspoons white sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 6-8 pieces lasagna noodles broken into bite sized pieces
  • 1 1/2 cups mozzarella cheese shredded

Instructions

Slow Cooker Method

  1. In a medium sized frying pan, heat the oil over medium high heat. Add in the onions and fry until they are tender.
  2. Add in the ground turkey and fry until it's lightly browned, then add in the garlic. Saute for another 2 minutes, then place the meat mixture into the crock of a slow cooker.
  3. Combine all of the remaining ingredients excepting the noodles and mozzarella cheese into the slow cooker.
  4. Cook on low for 6-8 hours.
  5. Around 40 minutes before serving, add in the lasagna noodles. Cook until tender.
  6. Ladle into bowls and top with mozzarella cheese.
  7. Enjoy!

Stove Top Method

  1. In a large soup pot, heat the oil over medium high heat. Add in the onions and fry until they are tender.
  2. Add in the ground turkey and fry until it's lightly browned, then add in the garlic. Saute for another 2 minutes.
  3. Combine all of the remaining ingredients excepting the noodles and mozzarella cheese into the pot.
  4. Simmer on medium heat until the onions are fully cooked, then add in the noodles.
  5. Cook until the noodles are tender.
  6. Ladle into bowls to serve and top with the mozzarella cheese.

Notes

  • This is a thick soup,almost a stew, so if you want it thinner simply add more broth at the end!
