Turkey Noodle Soup

Ingredients

  • 6 cups turkey stock
  • 3 celery chopped, stalks
  • 1 sweet potato peeled and diced
  • 3 cups turkey cut up (12-16 oz, cooked
  • ½ teaspoon poultry seasoning
  • chicken noodle soup mix Connecticut Cottage brand

Instructions

  1. In a 3 or 4-quart pot, add turkey stock, celery and sweet potato and bring to a boil. Reduce heat and stir in turkey, poultry seasoning, and vegetable seasoning packet from soup mix.
  2. Return to a simmer and cook for 10 minutes.
  3. Add pasta and simmer, covered for 10 minutes.
  4. Turn off heat and allow to stand 5 minutes. Serve with cornbread or other soft roll and enjoy.
