Turkish Chickpea Burgers Recipe
Description
Turkish Chickpea Burgers Recipe brings together chickpeas and a mix of fresh herbs including parsley and cilantro, seasoned with cumin, dill, paprika, allspice, and a touch of cayenne for mild heat. The batter also includes chickpea flour to bind and olive oil for moisture. After processing the ingredients into a coarse paste, patties are formed and dusted with chickpea flour to help them crisp during cooking. Chilling the patties for 1 to 2 hours firms them up to hold their shape when pan-fried in olive oil until golden brown.
The burgers have a tender yet firm texture and carry the aromatic, earthy flavor of warm spices combined with fresh herbs. The accompanying yogurt sauce with garlic powder adds a creamy tang that complements the patties nicely. This combination results in a balanced vegetarian burger, suitable for serving with pita wedges or similar bread.
Chilling the patties before cooking is important to maintain their shape, and dusting with chickpea flour helps achieve a nice crust during frying. The recipe allows making the patties ahead of time, making it convenient for meal prep or entertaining.
Ingredients
- 1 can chickpeas drained and rinsed
- ¼ cup red onion chopped
- ¼ cup parsley chopped
- ¼ cup cilantro chopped
- 2 Tbsp chickpea flour
- 2 Tbsp olive oil
- 1 Tbsp PLAIN yogurt or vegan yogurt
- 1 tsp kosher salt
- 1 tsp cumin ground
- 1 tsp dill fresh
- 1 tsp paprika
- ¼ tsp allspice
- ¼ tsp cayenne pepper
- 2 Tbsp chickpea flour for dusting
- olive oil for pan frying
Sauce for chickpea burgers:
- 1 6 oz PLAIN yogurt or vegan yogurt, container
- ¼ tsp garlic powder
Instructions
- In a food processor place all the ingredients except the flour for dusting.
- Process until you have a coarse paste.
- Take a generous amount in your hand and roll into a ball. Lightly flatten to form a patty. If you have a slider press, it will work great. Dust patties on either side with garbanzo bean flour. (chickpea flour)
- Place on a plate and refrigerate for about 1-2 hours before pan frying. They will firm up in the refrigerator.
- To pan fry: place a small amount of olive oil in a skillet on medium heat. Fry each patty for about 2 minutes on each side or until golden brown. Sprinkle with chopped parsley for a decorative touch.
- Serve with yogurt sauce and pita wedges.
Notes
- Refrigerate the patties for 1-2 hours before frying to firm them up and prevent crumbling.
- Cover chilled patties if making ahead to prevent drying out.
- Process the ingredients to a coarse paste rather than a smooth puree for better texture.
