  • 2 tablespoons butter unsalted
  • 1 red onion very finely chopped, large
  • 1 pound ground beef or lamb
  • 2 tablespoons tomato paste
  • 1 teaspoon red pepper flakes
  • 1 tablespoon paprika sweet
  • 1/2 teaspoon cumin
  • 1 teaspoon dried coriander
  • salt to taste
  • black pepper to taste
  • 1 cabbage thick stem removed, washed and roughly chopped, medium head
  • 2 cups beef broth

Instructions

  1. Place a Dutch oven over medium heat. Add the butter, and melt it.
  2. Add the onion and cook it, stirring occasionally, for about 3-5 minutes until soft.
  3. Add the ground beef and cook until nicely browned, breaking it down with a wooden spoon, about 5-7 minutes.
  4. Add the tomato paste, red pepper flakes, paprika, cumin, coriander, and salt. Stir and cook for 1 minute.
  5. Add the cabbage and the broth.
  6. Cover the pot and simmer, stirring occasionally, for 20 - 25 minutes or until cabbage is tender.
  7. Taste and adjust for salt and pepper. Garnish with parsley and serve.
