  • 1 pound Italian sausage mild
  • 1 medium onion diced (about ¼ cup, or shallot
  • ¼ cup sun-dried tomato softened in hot water, chopped
  • 1 teaspoon garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano dried
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 ½ cups heavy whipping cream 357 g
  • 1 cup chicken broth
  • 2 cups tomato halved, cherry, 298 g
  • 1 cup Parmesan Cheese freshly grated, 100 g
  • 2 packages potato gnocchi uncooked, 16 ounces each
  • 1 cup spinach 30 g, fresh
  • 2 cups mozzarella cheese shredded
  • parsley chopped for garnish

Instructions

  1. Preheat oven to 375°F.
  2. To a large oven-safe skillet over medium heat, add Italian sausage. Cook, stirring occasionally, until no longer pink (about 5-8 minutes).
  3. Add shallots and sun-dried tomatoes. Cook until the shallots are softened, about 1-2 minutes. Add garlic and cook for 1 more minute.
  4. Add tomato paste, oregano, paprika, garlic powder, salt, and pepper. Stir to combine.
  5. Add heavy whipping cream and chicken broth. Stir to combine.
  6. Add cherry tomatoes and parmesan. Stir to combine. Reduce heat to low and simmer until cheese is melted.
  7. Add the gnocchi and spinach. Stir to combine.
  8. Remove from heat. Sprinkle the mozzarella cheese evenly on top.
  9. Bake for 15-20 minutes, or until the cheese is golden and the sauce is bubbling.
  10. Garnish with fresh parsley. Serve warm.
