Ingredients

Servings
  • 4 large portobello mushroom caps each about 3-4 inches in diameter
  • 2 tablespoons extra virgin olive oil
  • ½ pound Italian sausage mild
  • ½ small yellow onion finely diced (about ¼ cup
  • 1 teaspoon garlic minced
  • 1 cup spinach chopped, 30 g, fresh
  • ½ cup sun-dried tomatoes soaked in hot water, chopped, about 8 whole
  • ½ cup ricotta cheese 123 g
  • 4 ounces cream cheese softened
  • 1 cup mozzarella cheese shredded, divided
  • ¼ cup Parmesan Cheese grated, 25 g
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • parsley chopped for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Set aside.
  2. Clean the mushroom caps with a damp paper towel. Remove the stems and gently scrape out the gills with a spoon. Brush the mushroom caps with olive oil on both sides. Place them on the lined baking sheet, gill side up.
  3. To a medium skillet over medium heat, add Italian sausage and onion. Cook until the meat is browned, breaking it apart as you go, and the onion is softened (8-10 minutes). Add the garlic; cook for one more minute.
  4. Stir in the spinach and sun-dried tomatoes, cooking until the spinach wilts, about 5 minutes. Remove the skillet from the heat and let the mixture cool slightly.
  5. In a medium bowl, combine ricotta cheese, cream cheese, ½ cup of mozzarella cheese, Parmesan cheese, Italian seasoning, and red pepper flakes.
  6. Mix the cooled sausage mixture into the cheese mixture until well combined.
  7. Evenly stuff each mushroom cap with the filling, mounding it slightly in the center. Top the mushroom caps evenly with the remaining mozzarella cheese.
  8. Bake for 25–30 minutes, or until the mushrooms are tender and the cheese on top is bubbly and lightly golden.
  9. Garnish with chopped parsley and serve immediately.
