Ingredients
- 4 large baking potatoes
- 8 lices Bacon
- 1 cup sour cream
- 1/2 cup milk
- 4 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded cheddar cheese divided
- 8 green onions sliced, divided
Instructions
- Preheat the oven to 350 degrees F (175 degrees C) and gather all your ingredients.
- Place the potatoes in the oven and bake until they are tender, which should take about 1 hour.
- Cook the bacon in a skillet over medium-high heat until it's evenly browned, then drain and crumble it.
- Cut the potatoes in half lengthwise and scoop out the insides into a bowl, keeping the skins intact.
- Combine the scooped potato with sour cream, milk, butter, salt, pepper, half of the cheese, and half of the green onions. Blend until creamy using a hand mixer.
- Fill the potato skins with the creamy mixture, then sprinkle the remaining cheese, green onions, and bacon on top.
- Bake the filled skins in the oven until the cheese has melted, which will take about 15 minutes.
