Buttery cookies, gooey caramel, and rich chocolate - Twix Cookies taste just like your favorite candy bar, but homemade and even better!

Ingredients
- 1 1/2 cups butter unsalted, softened
- 1 cup sugar
- 1 teaspoon vanilla
- 3 1/2 cups flour
- 1/4 teaspoon salt
- 1 cup chocolate chips divided
- 1 jar of caramel topping or 1 cup caramel squares melted

Instructions
First Make the Dough:
- Cream softened butter and sugar in the bowl of a stand mixer until smooth and fluffy. Add the vanilla and continue mixing.
- In another mixing bowl whisk together flour and salt. Slowly pour your dry ingredients into the bowl of wet ingredients, mixing as you go, until you have a fluffy batter.
- Cover the bowl with plastic wrap and chill dough in refrigerator for 30 minutes.
Bake the Cookies:
- Preheat oven to 350°F and line a baking sheet with parchment paper or a non-stick silicone baking mat.
- Take the cookie dough out of the fridge and roll into Tablespoon size balls, placing them on your prepared pan.
- Gently press down in the center of each cookie with your thumb to make an indentation.
- Bake at 350°F for 15 to 20 minutes, or until the cookies begin to turn a light golden brown around the edges. Remove from the oven and transfer to a wire rack to cool.
Add the Toppings:
- Melt chocolate in the microwave in 20 second intervals, until melted and smooth. Dip the bottom of each cookie in the melted chocolate, and place them chocolate-side-up on a cookie sheet until chocolate is hard.
- Place a teaspoonful of melted caramel in the center of each cookie. You can also use caramel sauce from a jar.
- Scoop remaining melted chocolate into a plastic pastry bag. Cut the tip off the bag and drizzle on top of the caramel layer.
- Allow cookies to cool completely, so the caramel and chocolate sets. Enjoy!

- Prep Tips
- Chocolate - We used semi-sweet chocolate chips, but you could also use milk chocolate chips or dark chocolate to switch up the flavor or make use of what you have on hand at home.
- Caramel - We used soft caramel squares and melted them to make the filling for our Twix cookies. (Be sure to remove wrappers before melting and use a microwave-safe bowl). If the caramel is too thick to scoop or pour after melting, you can add a splash of milk or cream to soften and make the caramel more workable. Alternatively, you can use caramel sauce from a jar for the filling as a time-saver.
- Storage - Normally I keep my cookies at room temperature, but these taste amazing when they're chilled! You can store cookies in an airtight container on the counter (for softer caramel filling) or in the fridge (for a chilled treat).
