Tzatziki

Tzatziki, cacık (Turkish) or cнежанка (Bulgarian) is a yogurt and cucumber-based mezze that is widespread in the southern Balkans and the Middle East.

Ingredients

Servings
  • 2 cups Greek goat or sheep yogurt
  • 1 cucumber , peeled and seeded
  • 2 garlic cloves , chopped
  • 1 tablespoon dried mint
  • 2 tablespoons chopped dill
  • 3 tablespoons olive oil
  • salt
  • pepper

Instructions

  1. Grate the cucumber using the large side of the grater, and place it into a colander.
  2. Salt well, and allow to drain for 30 minutes.
  3. Pour the yogurt into a salad bowl.
  4. Squeeze the cucumber to completely wring out as much water as possible, then add to the yogurt.
  5. Add the chopped garlic, dried mint, and dill. Mix well.
  6. Season to taste with salt and pepper.
  7. Add olive oil, and mix well.
  8. Refrigerate for 1 hour before serving.
