Learn how to make your own Japanese Plum Wine at home. It does take awhile to mature though it is so worth for waiting!

Ingredients
- 2 lb Ume plum fruits
- 1 lb rock sugar *1
- 8 cups liquor *2
Instructions
- Soak plum fruits in water for 3 hours.
- Stylise the glass jar by boiling or wipe with spirits or alcohol wipes and set aside.
- Wash the plum fruits thoroughly under running water.
- Remove excess water off the plum fruits by gently tapping the fruits.
- Remove the stem ends with a toothpick or a bamboo skewer.
- Place rock sugar and ume plum fruits alternately in layers into the glass jar.
- Pour the liquor of your choice into the glass jar.
- Put the lid on and leave it at a cool place where no direct sunlight for minimum 6 months.
Notes
- *1 You can adjust the amount of rock sugar between 1-1.8lb (500-800g) depends on how sweet the plum wine will be.
- *2 Choose liquor that has above 35% alcohol content such as vodka, rum, gin etc.
- *3 The nutritional value is for a whole jar.
- *4 I used 350 g of plum, 280g of rock sugar, and 700ml vodka.
