Instructions

  1. In a bowl, combine dry ingredients and set aside.
  2. With a stand mixer with a paddle attachment (or a hand mixer), combine butter and sugar until fluffy, about 3-4 minutes.
  3. Add the egg and vanilla and mix until well combined and smooth.
  4. Add flour mixture a little bit at a time with the mixer on low until mixed and the flour is incorporated. Continue mixing until the dough holds together, about 5 minutes. (If the dough seems floury or powdery, it need to continue to mix together).
  5. Divide the dough in half and flatten each half into a disk. Wrap with plastic wrap and place in the refrigerator for at least 2 hours.
  6. Preheat the oven to 375°F. While the oven is preheating, remove the dough from the fridge.
  7. Sprinkle the worksurface with a bit of powdered sugar or flour so the dough doesn't stick. Roll dough to ¼" thickness and cut into desired shapes.
  8. Place cookies 1-inch apart on an ungreased cookie sheet and bake for 8-10 minutes or until cookies begin to brown on the edges.
  9. Cool completely before decorating with icing.

Notes

  • Choose clear vanilla or try almond extract for a twist!
  • Ensure butter and egg are at room temperature.
  • Beat butter for the full time; if the dough seems powdery, keep mixing.
  • Refrigerate as directed. Let dough reach room temperature before baking.
  • Use an ungreased sheet for well-shaped cookies.
  • Get creative with shapes and colors for any occasion!
