These Valentine’s Day Snack Bites come together in minutes, require no baking, and are so easy that even little kids can help make them! They taste like a granola bar, and are easy to customize for your own tastes.

Ingredients
- 1 cup oats use quick oats or instant oats
- ¼ cup peanut butter creamy or crunchy
- ¼ cup honey
- ¼ cup sunflower seeds I used unsalted
- 1/4 cup shredded coconut I used unsweetened
- ¼ cup M&Ms or other colored chocolate candies
- Sprinkles I used heart shaped, optional
Instructions
- Cover a baking sheet with parchment paper or wax paper. In a large mixing bowl add oats, peanut butter, honey, sunflower seeds, shredded coconut and chocolate candies. Mix everything well until combined.
- Roll mixture into round balls, rolling until about the size of a ping pong ball. You can also use a standard cookie scoop to help you portion the bites. Place each bit on the baking sheet. Roll in sprinkles if desired, or press a few heart sprinkles into each bite.
- Place in the refrigerator for about 30 minutes to firm up, or 15 minutes in the freezer. Then serve and enjoy!
Notes
- Quick oats or instant oats work best in this recipe. Steel cut oats are too thick and won't work very well in this recipe.
- If the dough is still too stick you can add extra oats to help the dough firm. Add a tablespoon at a time until the dough easily rolls.
- Using a cookie scoop can help you portion the bites quickly and roll the balls evenly. Holding the dough too long in your hands can sometimes make the color on the candies or sprinkles start to bleed from the warmth from your hands.
