Vegan Caesar Salad with Dressing

Vegan Caesar Salad

  • 1 head romaine lettuce
  • ¼ cup fresh parsley chopped
  • ¼ cup red onion chopped
  • ½ can chickpeas drained and rinsed
  • ½ loaf crusty bread torn into bite sized pieces
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon pepper adjust to taste

Vegan Caesar Dressing

  • ½ cup raw cashews soaked in water for at least 2 hours
  • ½ cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic
  • ¼ cup red onion chopped
  • 1 tablespoon capers
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon pepper adjust to taste

Instructions

Make dressing

  1. In a blender or food processor, combine the soaked cashews, water, lemon juice, Dijon mustard, minced garlic, chopped capers, salt, and black pepper to taste.
  2. Blend the dressing ingredients until smooth and creamy. Place in an airtight container in the fridge to chill while you prepare the rest of the salad ingredients.

Assemble salad

  1. Preheat the oven to 375°F (190°C).
  2. Cut or tear the crusty bread into bite-size pieces and place them on a baking sheet. Bake for 10-12 minutes, or until the bread is crispy and golden.
  3. In a large mixing bowl, toss the Romaine lettuce with the chopped parsley, chives, red onion, chickpeas and the crusty bread pieces to the mixing bowl.
  4. Drizzle the Caesar dressing over the salad.

Notes

  • Mix greens or add more vegetables for more crunch. Mix romaine lettuce with kale, arugula, or even butter lettuce for a crunchier bite. You can also add tomatoes, cabbage, or other vegetables to the salad. 
  • Chill the delicious dressing for at least one hour before serving to achieve a thicker consistency and a creamier texture.
  • Store separately. To keep vegan caesar salad fresh for longer, make sure to keep the ingredients separate in an airtight container in the refrigerator.
