Vegan Ceviche with Watermelon

This vegan ceviche uses watermelon vs. raw fish to make a refreshing, vegan version of this delicious appy.

Ingredients
- ½ watermelon diced, small, seedless
- 3 jalapeños roasted
- 1 avocado diced
- 1 red onion diced, medium
- ½ cup green olives roughly chopped
- 3 garlic minced, cloves
- ¼ cup cilantro chopped
- ¼ cup basil chopped
- 2 tbsp. olive oil
- orange juice juice of 1 orange
- lime juice juice of ½ lime
- 2 tsp. salt
- 1 tsp. garlic powder
- ½ tsp. black pepper cracked
- tortilla chips to serve
Instructions
- To roast the jalapenos, add to a pan over high heat it lightly sprayed with oil.
- Cook and flip continuously until roasted on each side.
- Cool slightly, remove the core & seeds, finely dice and set aside.
- Prep & add everything to a large bowl, mix together, and season to taste.
- Store in the fridge until ready to serve, the longer it sits the more amazing the flavour will become!
- Serve with your favourite tortilla chips! Delicious!!
Notes
- Feel free to add any other ingredients you wish! Customize it!! PERFECT recipe for summer!
- Store the ceviche in the fridge for 4 - 5 days in an airtight container in the fridge.
