Vegan Ceviche with Watermelon

This vegan ceviche uses watermelon vs. raw fish to make a refreshing, vegan version of this delicious appy.

Ingredients

Servings
  • ½ watermelon diced, small, seedless
  • 3 jalapeños roasted
  • 1 avocado diced
  • 1 red onion diced, medium
  • ½ cup green olives roughly chopped
  • 3 garlic minced, cloves
  • ¼ cup cilantro chopped
  • ¼ cup basil chopped
  • 2 tbsp. olive oil
  • orange juice juice of 1 orange
  • lime juice juice of ½ lime
  • 2 tsp. salt
  • 1 tsp. garlic powder
  • ½ tsp. black pepper cracked
  • tortilla chips to serve

Instructions

  1. To roast the jalapenos, add to a pan over high heat it lightly sprayed with oil.
  2. Cook and flip continuously until roasted on each side.
  3. Cool slightly, remove the core & seeds, finely dice and set aside.
  4. Prep & add everything to a large bowl, mix together, and season to taste.
  5. Store in the fridge until ready to serve, the longer it sits the more amazing the flavour will become!
  6. Serve with your favourite tortilla chips! Delicious!!

Notes

  • Feel free to add any other ingredients you wish! Customize it!! PERFECT recipe for summer!
  • Store the ceviche in the fridge for 4 - 5 days in an airtight container in the fridge.
