These simple vegan chocolate chip cookies are made with just a handful of ingredients in under 20 minutes! These make a perfect plant based dessert or packable snack - and they're so easy to make.

Ingredients
- 1.25 cups gluten-free flour or all purpose flour
- 2 tbsp baking powder
- ½ cup coconut sugar or white sugar
- ½ tsp salt
- 4 tbsp maple syrup
- 2 tbsp coconut oil melted
- ¼ cup almond milk
- ½ cup vegan chocolate chips
Instructions
- Preheat oven to 350 degrees F.
- Add the gluten-free flour, baking powder, coconut sugar and salt to a large mixing bowl and whisk together the dry ingredients. In a separate mixing bowl, whisk together the maple syrup, coconut oil and almond milk.
- Combine the wet and the dry ingredients, also folding in the chocolate chips.
- Using damp hands, roll the dough into small balls and gently flatten them down on a sheet of baking paper. Bake in the preheated oven for 8-10 minutes, until golden but still soft on the inside.
